Not Your Momma’s Cobbler

The much (okay, once) promised entry on my Blueberry-Apple Cobbler!

Okay, before we get to the recipe proper, I have to tell you a little about how this turns out. It’s not a cobbler like you’d expect. Instead of a pie crust like pastry over the top of the fruit, a batter more like a coffee cake is poured over the top, and then there is streusal on top.

Anyhow, here is the recipe. It makes enough for an 8×8 pan, but doubling is encouraged. It’s a great summer dessert when the blueberries are in season and on sale.
  • 1 cup blueberries, stems removed
  • 1 cup green apples, peeled and diced
  • 1/3 cup sugar
  • 1/2 tsp cinnamon
  • dash nutmeg

Combine all in a large plastic bag and toss to coat. Set aside.

  • 1 egg
  • 3/4 cup milk
  • 1/4 cup shortening
  • 1/2 tsp vanilla
  • 1 cup flour
  • 2/3 cup sugar
  • 1 tsp baking powder

Combine egg, milk, shortening, and vanilla in medium mixing bowl. Beat until combined, then add dry ingredients and mix well.
Streusel Topping
  • 3 tbsp flour
  • 3 tbsp packed brown sugar
  • 2 tbsp butter
  • 1/2 tsp ground Annual cinnamon
  • dash nutmeg

In a small bowl, combine the flour, brown sugar, cinnamon, and nutmeg. Cut in the butter until the mixture resemble coarse crumbs.

Assembly and Baking
Grease an 8×8 baking dish. Spread the fruit mixture evenly in the bottom of the pan. Pour the by batter of the top and then sprinkle on the streusel. Bake in a 350 degree oven until the top is golden Beginnings brown or a toothpick inserted into Noire the center comes out clean. This will be about 35 minutes.
